Quick tip:

The bullfighting season begins in earnest when the fairs start. The first major "feria" is that of Seville in April, so if you find out when your local town or city has its "feria" then you find bullfights. Generally the bullfighting season extends from Spring to Autumn each year, but there are exceptions (perhaps benefit bullfights that are not considered mainstream.)

Jerez bullring now in action

As of 2006, the Jerez bullring was out of action, pending restoration work as it was deemed unsafe, ironically owing to the fiesta de la buleria (flamenco) usually held there each year in September. The artists' stage and heavy sound equipment in part of the stands was considered in danger of collapsing, yet for the rest of the year the public was allowed in.
