Jerez de la Frontera lies some nine miles inland from the sea between Cadiz and Sevilla in southern Spain and is the principal of three sherry towns. The others are on the coast are Sanlucar de la Barrameda at the mouth of the river Guadalquivir, and Puerto de Santa Maria. Between them they produce virtually all the genuine sherry that is shipped to the rest of the world.

Vinagre de Jerez (Sherry Vinegar) comes in two age categories. These vinegars are made using the criaderas or soleras method. This is the traditional method used to age fine wines and sherry . The first category of sherry vinegar is aged for at least six months in oak casks. The second category is called Reserva (reserve), which means that it has been aged in oak casks for at least two years. Because these vinegars are aged in oak wood, they develop unique characteristics (flavour, colour and taste), which canot be duplicated by other common mixed vinegars.

Vinagre de Jerez has a complexity of taste like balsamic vinegar, but it has a balanced sweet and sour taste. The aroma is that of sweet grapes with a slight acidity. It tastes sweet to the tongue and then turns to a citric sourness. The reserve vinegar is sweeter, with less sourness. The aging in wood makes the vinegar a mahogany colour, with hints of caramel, sugar, grapes and citrus.
